Healthy Healing Soup
This soup is great to keep your immune system boosted. Most of the ingredients representative of the Chinese element Metal so they consolidate or draw things together and then the herbs have ‘tree’ or ‘up and out’ energy to help expel from your body.
At the first sign of a scratchy or sore throat make a good batch of this soup and finish the lot. Then make another one and drink that too - it’s a bit like a thin lentil soup. It will help you sweat and shift infection out.
Ingredients:
one white onion
a thumb of ginger
four cloves of garlic
one tin of chickpeas
1 Litre of vegetable stock
Coriander and Parsley - a handful of each
Method:
Chop all of the vegetables roughly and drain the chick peas. Put the vegetables and chickpeas in a large saucepan and add the vegetable stock. Bring to the boil and simmer for 5 minutes ONLY and then liquidise. Finely chop the herbs and stir them through (if using dried herbs then add them at the beginning so that they get a chance to soften). Enjoy :)
